Almost half way!

It is February 13th today, and that means that I am one day away from the half way mark in this month long challenge.

Here is an image of what my workout challenge this month entails:

So today consisted of 12 pushups, followed up by 85 leg lifts and finally 130 squats. WHEW! That was enough to exhaust me completely. I am definitely feeling stronger than I was at the beginning of this month!

I am also still partaking in a no sugary drinks, gluten free, no chips, candy and garbage. I will however admit that I did have fries on night with a bun-less burger. I will justify it by saying that although it was deep fried, at least it was gluten free( fried in peanut oil). I do not feel any guilt about my eating choices this month. I think I am doing fantastic. The lesson that I am trying to teach myself is moderation. I can have fries, or a soda, or even some chips… what I can’t have is only  fries, sodas and chips .

So tomorrow is hump day, and I start on the last half of the month, and the last half of this challenge. I hope that its as successful and as rewarding as this first half.

The best potato wedge fries! Nomnomnom

I don’t know if its because I was really really hungry, or if its because I am just amazing… But I just made the best fries/potato wedges in the world.

I am a little disappointed that I didn’t take pictures during the preparation. I was just too hungry and focused on getting them in the oven and cooked!

They are so easy to make.

Preheat the oven to 425

I used two potatoes. Washed them and left the skin on.

I cut them into wedges, not too thick.

Tossed them in olive oil.

I then placed them all on a foil lined baking sheet.

I then sprinkled garlic powder, paprika and salt on them.

I then baked them for 25 minutes, then flipped them and cooked them another 7 minutes.

I wish I would have made more…. Or that I wouldn’t have shared with Darcy. They were so good. Especially with my home made ketchup.

Sweet potato fries

I don’t know why, but I have never been a big fan of sweet potatoes, and I guess by association, sweet potato fries. Lately with my change to Paleo, I have been thinking that I need to start expanding my palate. Perhaps foods that I once detested wont be so bad anymore.

So tonight I am attempting sweet potato fries. I don’t have a lot of experience making fries, and definitely not this variety. However, I am a big fan of carrot fries (which I will have to add on another post sometime) so I am just going to improvise this.

Since its just me, and even still it seems like a lot of fries…

1 average sized sweet potato
Olive oil
Salt
Pepper

Turn the oven on to 400 degrees

Line a backing sheet with parchment or as I am using because I’m out of parchment – aluminum foil

Peel and slice the sweet potato, I like to make things skinny because I like crispy!

Now coat the sticks of sweet potato in olive oil –Lightly! (I tossed them all in a baggie and poured in the oil and swooshed it around a bunch till everything was coated.

Bake in the oven for approx 30 minute turning half way through ( bake a bit more or less time depending on your taste preference)
