Easy Lemon Pepper Chicken

There are just those days, the days when you just don’t feel like cooking something complex, extravagant or time consuming. You just want something easy that tastes good. Well this is it! I don’t think that it can get much easier unless I came to your house and cooked it for you.

Ingredients

  • 1 chicken breast ( I used 6 small fillets)
  • Juice of 1 lemon
  • 1-2 tsp Kasandrinos Extra Virgin Olive Oil ( I just used light tasting olive oil)
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper

Directions

  1. In a plastic ziploc bag, combine the chicken breast, lemon juice, olive oil, salt and pepper. Press the air out of the bag and seal.
  2. Use a meat pounder or rolling pin to flatten the chicken breast into one even thickness. I have also used an empty Nalgene bottle for the same purpose when I didn’t have a meat pounder. Improvise. Be a MacGuyver. ( I did not pound my chicken since they were so small and all about the same size)
  3. Let the chicken marinate for at 30 minutes for best results but you can cook it right away if needed. ( seriously leave it for the 30 mins! nomnomnom)
  4. Heat a skillet over medium-high heat and add more of your fat of choice, such as coconut oil.
  5. Cook the chicken for 4-5 minutes per side or until completely cooked through.
  6. Let the meat rest for at least 5 minutes before slicing.

This recipe is NOMNOMNOM! juicy and flavorful. I could ave just kept eating it! I really enjoyed it!

Watermelon Refresher!

So I was looking in my fridge earlier, trying to think of something I wanted… You know that time where you are just standing there, letting all the cold air out… everything in the fridge just looks boring and nothing seems appealing? Today is one of those days…

Then I saw it. The watermelon I bought for my daughter. Well, I hardly think she is going to eat it up before it goes bad… so I’m taking it! I don’t know why I feel so sly… its not like I’m stealing food from her… lol

Ingredients

  • Watermelon (2-3 cups)
  • lime (1)
  • Ice ( about 10)

Directions

  1. Chop up your watermelon into blend-able chunks and toss into blender.
  2. squeeze in the juice from your lime
  3. add in some ice cubes

The only thing you need to make sure of is to make sure your watermelon chunks are smaller, if you blender is crap like mine…. if you have a super awesome magic blender, then its probably not a concern.

This literally takes less than 5 minutes to make… and it is perfect for a hot summery day! or a day that you just want to pretend is hot and summery… 😉

Beef Chuck Braising Ribs

I saw these at the store the other day. And I really had no idea what to do with them. But for some reason they were very cheap… like I’m talking 4$ for 4 of them. So I figured, why not. Ill bring them home and cook them, and if they taste like garbage… well that’s only a dollar each so no big deal.

So as you saw the other day, I made the Jalapeno BBQ Sauce. And because it was date night, I didn’t actually get to use it… which is too bad, because its pretty tasty.

So today, I thought lets toss those little suckers on the bbq and slather them with bbq sauce. WELLLLLLL… YUM! they were tasty morsels in my mouth. I wish that I had more. I guess I will just have to keep an eye out for them the next time I am out grocery shopping.

I like sausage

Well if that title didn’t get some attention.. I’m not sure what will.  Since this is not a crazy exotic blog, I can only mean one thing! FOOD. Nomnomnom!

Have you ever read the packaging for breakfast sausages? There are so many added ingredients. I used to think it was basically pork in a tube… but they are full of sugar, soy protein isolate, wheat etc! why do you need wheat in a sausage? FILLER!

So today, I am going to attempt to make my own sausages. Just meat and spices!

Since I really have no idea how to make them on my own, I set out to Google and based on the picture and if i had most of the ingredients, I have chosen to follow the following recipe as seen on PrimalPalate.com

Ingredients for 4ppl

  • 1 lb Ground Pork
  • 1 tsp Fennel (i do not have any fennel… so hopefully its OK without it)
  • 1 tsp Garlic
  • 1 tsp Paprika
  • 1/2 tsp Black Pepper
  • 1/2 tsp Sage
  • 1/2 tsp Salt
  • 2 Tbsp Coconut Oil, Organic
  • 1/4 tsp Cayenne Pepper ( I’m using hot sauce instead because I thought i had some… but don’t :(… close enough right? )
  • 1/4 tsp White Pepper

Directions

  1. Combine pork, garlic, and all spices in a mixing bowl, mixing until it reaches an even consistency.
  2. Form pork mixture into 2-ounce patties (approximately 8 patties).
  3. Heat a skillet to medium heat with 1 tablespoon of coconut oil per 4 patties.
  4. Cook the patties for approximately 3–4 minutes per side.
  5. Each side should be golden, and the center of the patties should no longer be pink.

As you can see by the large amount of sausage patties… not only did I make them a bit smaller ( I really like things that are bite size) but i also double the recipe so I could freeze some for easy breakfasts… or snacks 😀 They are pretty good. I really like sausages with ketchup… I guess i need to make some Paleo ketchup soon!

Jalapeno BBQ Sauce

One of the harder things to live without when changing over to the paleo way of eating, is sauces. The mass produced, readily available sauces are full of nasty ingredients, and while they ” taste so good” they are not very good for you.  So a few months back, you might remember the post I made on preparing my own ketchup ( click here for the post). It was a big success in my house, I loved it, and my ketchup hating hubby also liked it!

So now I am going to attempt Jalapeno BBQ Sauce as seen on Paleo Pot.

Ingredients

  • 1 cup of tomato sauce. 
  • 1/2 cup of beef stock.
  • 3 jalapenos, chopped or slice. Remove seeds and stems to reduce the heat level. ( I only bought two as I have never bought… and i got scared and only used 1 1/3 of them)
  • 1 small red onion, diced.
  • 1/3 cup of apple cider vinegar.
  • 1 small can of tomato paste, about 1/3 to 1/2 cup.
  • 1 tbsp of Spanish smoked paprika. ( i only have regular, so hopefully that works too!)
  • 3 cloves of garlic, chopped. (I also substituted some garlic powder for this)

Directions

  1. Combine all of your ingredients in a medium sauce pan and stir well. 
  2. Bring mixture to a boil then reduce heat to a very low simmer.
  3. Simmer for 30 minutes, stirring occasionally. For a thicker sauce, reduce/simmer for longer.
  4. Blend your sauce in the pot using an immersion blender, or just use a regular food processor or blender.
  5. Enjoy!

So, I started making this. The hubby came home, and asked if I was still up for date night?! EEEEEKKKK! I forgot we were going out! But thats ok, I have enough time to whip up some bbq chicken ( with other bbq sauce) and some salad for dinner all while finishing up this bbq sauce. What this all means is that I will just have to BBQ again tomorrow! I will never complain about that!

Paleo Ribs

Who doesn’t enjoy a good rack of ribs? exactly. I LOVE ribs, slathered in BBQ sauce, falling apart in my mouth… Mmm.
I spent a while online today trying to find a Paleo BBQ sauce that both looked delicious and I actually had the ingredients to make. No success. But that doesn’t mean that I cant have juicy delicious ribs.
Really its easy peasy, I have lots of spices in my cupboard. Lets make a dry rub!

So, to make my ribs just follow these steps.
1. preheat the oven to 250
2. in a bowl, combine the following spices:

  • 1/2 Tbsp. sea salt
  • 1Tbsp. Chili powder
  • 1 Tbsp. paprika
  • 1 Tbsp. garlic powder
  • 1 Tbsp. onion powder
  • 1 Tbsp. Chipotle powder
  • 2 tsp. ground black pepper

3. Rubs the stuff all over the runs.. toss in the oven… wait about 2 and 3/4 hours and voila YUM!

Home Made Blueberry Muffins

Today I wanted to bake something. I don’t know why… I usually don’t eat anything that I bake…. I think perhaps i just enjoy the baking part. So what could i make?!

Yesterday I got a bunch of free books off Amazon, so i looked through those. Blueberry Muffins…Darcy likes those! so we had a winner!

It was relatively easy. And the recipe, i just got out of an online kindle book called 30 Delicious Paleo Guilt Free Desserts…. I think it might be by someone called Cheerful Chef…. but im not positive. LOL

Darcy told me that they taste different than wheat flour made muffins, but he really liked them… took a bunch to work with him!

So, basically for today, I will just post the recipe below as I took screen shots of it ( the only alteration I made was instead of Ghee, I used melted butter) and a few photos of today’s preparation. Enjoy 🙂
