Its Official – 90 day challenge starting next week!

As some of you have heard, In the last week or so, I have hurt my back. And although I have been resting and I am feeling a LOT better, I wont be starting the new challenge tomorrow.  Instead I will rest for one more week, and then we will start. October 7th is our start date, and January 5th is our finish date. Lets see how we can do over the holidays. I personally think that it will keep us fit through the holiday feasting, and perhaps we will be a bit more conscience as to what we will be putting in our bodies.

I am very excited to start this challenge! I know a few of you out there are going to be joining me, and that is so wonderful! I look forward to hearing from you all!

Time to get psyched up for next monday!

Day 27 Squat Challenge

I don’t know how many of you follow my page on Facebook as well…  Pickles Are Cucumbers

But last night I wrote a post talking about the upcoming challenge that I wanted to partake in here is my post

I’m feeling a bit sad about the challenge starting in two days… I am pretty sure I’ve pulled a muscle in my back and have mostly been out of commission the last few days for doing most things. Icing it constantly today in hopes that it will feel better soon.

There is a chance I may have to postpone the 90 day challenge by a week so that I can heal up and not injure myself further. Major bummer, I am very anxious to get started. I will let everyone know how I am feeling tomorrow and if the challenge will be starting, or if it will be starting on the following week. Sorry if I have disappointed anyone:(

On a bright side, I am still able to do my squats, and will finish this challenge in just a few days… I am pretty pleased and proud of that!

Day 26 Squat Challenge

Yesterday was magically easy for me.  Well… I don’t know if I would go that far.  But i put on the video, i put on a tv show.. and by the end of teh 220 squats I was so zoned out that I actually did one extra before realizing that I was finished.

Day 25 Squat Challenge

Well, I hope your rest day was awesome because today is definitely a kick up a notch type day!

munber-25-clip-artOn this day… which of course is the 25th day of the challenge… we are going to be doing 220 squats… thats right… 30 more than last time! whew! Its going to be quite the challenge today!

Day 24 Squat Challenge

Today is day 24! less than a week left to go!

Easy Lemon Pepper Chicken

There are just those days, the days when you just don’t feel like cooking something complex, extravagant or time consuming. You just want something easy that tastes good. Well this is it! I don’t think that it can get much easier unless I came to your house and cooked it for you.

Ingredients

  • 1 chicken breast ( I used 6 small fillets)
  • Juice of 1 lemon
  • 1-2 tsp Kasandrinos Extra Virgin Olive Oil ( I just used light tasting olive oil)
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper

Directions

  1. In a plastic ziploc bag, combine the chicken breast, lemon juice, olive oil, salt and pepper. Press the air out of the bag and seal.
  2. Use a meat pounder or rolling pin to flatten the chicken breast into one even thickness. I have also used an empty Nalgene bottle for the same purpose when I didn’t have a meat pounder. Improvise. Be a MacGuyver. ( I did not pound my chicken since they were so small and all about the same size)
  3. Let the chicken marinate for at 30 minutes for best results but you can cook it right away if needed. ( seriously leave it for the 30 mins! nomnomnom)
  4. Heat a skillet over medium-high heat and add more of your fat of choice, such as coconut oil.
  5. Cook the chicken for 4-5 minutes per side or until completely cooked through.
  6. Let the meat rest for at least 5 minutes before slicing.

This recipe is NOMNOMNOM! juicy and flavorful. I could ave just kept eating it! I really enjoyed it!

Watermelon Refresher!

So I was looking in my fridge earlier, trying to think of something I wanted… You know that time where you are just standing there, letting all the cold air out… everything in the fridge just looks boring and nothing seems appealing? Today is one of those days…

Then I saw it. The watermelon I bought for my daughter. Well, I hardly think she is going to eat it up before it goes bad… so I’m taking it! I don’t know why I feel so sly… its not like I’m stealing food from her… lol

Ingredients

  • Watermelon (2-3 cups)
  • lime (1)
  • Ice ( about 10)

Directions

  1. Chop up your watermelon into blend-able chunks and toss into blender.
  2. squeeze in the juice from your lime
  3. add in some ice cubes

The only thing you need to make sure of is to make sure your watermelon chunks are smaller, if you blender is crap like mine…. if you have a super awesome magic blender, then its probably not a concern.

This literally takes less than 5 minutes to make… and it is perfect for a hot summery day! or a day that you just want to pretend is hot and summery… 😉
