Sweet potato fries

I don’t know why, but I have never been a big fan of sweet potatoes, and I guess by association, sweet potato fries. Lately with my change to Paleo, I have been thinking that I need to start expanding my palate. Perhaps foods that I once detested wont be so bad anymore.

So tonight I am attempting sweet potato fries. I don’t have a lot of experience making fries, and definitely not this variety. However, I am a big fan of carrot fries (which I will have to add on another post sometime) so I am just going to improvise this.

Since its just me, and even still it seems like a lot of fries…

1 average sized sweet potato
Olive oil

Turn the oven on to 400 degrees

Line a backing sheet with parchment or as I am using because I’m out of parchment – aluminum foil

Peel and slice the sweet potato, I like to make things skinny because I like crispy!

Now coat the sticks of sweet potato in olive oil –Lightly! (I tossed them all in a baggie and poured in the oil and swooshed it around a bunch till everything was coated.

Bake in the oven for approx 30 minute turning half way through ( bake a bit more or less time depending on your taste preference)
